Pumpkin Bread

I'll be the first to admit, I LOVE bread. I really do. From a good piece of sourdough with butter to the sweetest of breads, I LOVE it all. Naturally, I had to try my hand at a pumpkin bread. I will be honest, this proved to be a little bit of a challenge. One attempt, it came out like a dense pumpkin pie shoved in a crispy crust... NOT GOOD! Lucas quietly muttered an "interesting" as he tried to finish a bite. In the end though, I ended up with a deliciously moist, pumpkin bread. 

Here is What You Need:


1 15 oz can Pumpkin Filling
2 1/2 cups All Purpose Flour
1 1/2 cups Sugar
1 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Vanilla
2 teaspoons Cinnamon* 
1 large Egg
1/2 cup of Water

9 inch Bread Pan

*For a more spiced recipe, substitute: 1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/2 teaspoon all spice


1 cup Brown Sugar
2 tablespoons softened Butter

Step One:

Preheat oven to 325 degrees.

Step Two:

Mix flour, salt, baking soda, baking powder and cinnamon. Set aside. 

Step Three:

Beat egg, sugar and vanilla together. Add pumpkin filling and water and whisk until well combined. 

Step Four:

Slowly add flour mixture and stir well. 

Step Five:

Cut butter into the brown sugar. It will be lumpy and this is good!

Step Six:

Pour the pumpkin mixture into a well greased 9 inch bread pan. Sprinkle the brown sugar and butter on top.

Step 7:

Set the timer to 1 hour and pop the pan in the oven!
