Summertime Pasta Salad


Summer may very well be one of my favorite times of year! I just love the warm air, the cool drinks and the delicious food. Lucas and I are HUGE fans of pasta salad and I wanted to create something fresh and tasty for BBQs and evenings on the porch.  

Here is what you need:

1 lb Tri-Color Rotini

1 Small Red Onion

1 Jar of Sun Dried Tomatoes

1 Jar of Marinated Artichoke Hearts

1/3 cup of Sugar

Bernstein's Restaurant Italian Dressing

Salt and Pepper to Taste

1. Cook the Pasta in Boiling Water for 8 minutes or until pasta is tender. 

2. Drain Pasta and cool down with running cold water and ice. 

3. Chop the Onion. Drain the Sun Dried Tomatoes and Artichokes and set to side. 

4. Pour 3/4 of the Italian Dressing in a Bowl and stir in the sugar. Add the onion, artichoke and sun dried tomatoes. 

5. Add mixture to the pasta and toss. Refrigerate until served.
